Ingredients

  • 2 lb chicken thigh, boneless, skinless
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 8 oz mushroom, sliced
  • 4 clove garlic, minced
  • 14 oz canned tomatoes, crushed by hand
  • 2 tbsp tomato paste
  • 1 tsp oregano dried
  • 1/2 tsp red pepper flakes
  • 1 tsp salt
  • 2 tbsp fresh basil, torn

Steps

  1. Season the chicken with half the salt. Brown it in the olive oil in a large Dutch oven over medium-high heat, about 4 minutes per side, then set aside.
  2. Cook the onion, pepper and mushrooms in the same pot 8 minutes until softened. Stir in the garlic and tomato paste for 1 minute.
  3. Add the tomatoes, oregano, pepper flakes and remaining salt, then return the chicken to the pot.
  4. Cover and simmer gently 25 minutes, until the chicken reaches 165 F (74 C) and the sauce has thickened.
  5. Scatter with basil and serve.
