Ingredients

  • 2 lb chicken thigh, boneless, skinless
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup parmesan, grated
  • 4 clove garlic, minced

  2. Heat the olive oil in a large skillet over medium-high heat and sear the thighs 5 minutes per side until deeply golden. Move them to a plate.

  4. Stir in the parmesan, sun-dried tomatoes and remaining salt and simmer 3 minutes until slightly thickened.
  5. Return the chicken to the pan and simmer 8 to 10 minutes until it reaches 165 F (74 C), then stir in the spinach until wilted.
