Ingredients

  • 1 1/4 lb ribeye, two steaks, about 1 inch thick
  • 4 tbsp butter
  • 3 clove garlic, smashed
  • 1 tsp thyme dried
  • 12 oz asparagus, trimmed
  • 1 tbsp avocado oil
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Steps

  1. Pat the steaks dry and season with the salt and pepper. Let them stand 20 minutes at room temperature.
  2. Heat the avocado oil in a heavy skillet over high heat until just smoking and sear the steaks 3 to 4 minutes per side.
  3. Lower the heat, add 3 tablespoons butter, the garlic and thyme, and baste the steaks for 1 to 2 minutes. Cook to 135 F (57 C) for medium-rare or 145 F (63 C) for medium.
  4. Rest the steaks on a plate for 5 minutes.
  5. Add the remaining butter and the asparagus to the pan and cook 4 to 5 minutes until crisp-tender, then serve with the steaks and pan juices.
