Ingredients

  • 12 oz ham, diced
  • 3 cup white beans
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrot, diced
  • 2 stalk celery, diced
  • 3 clove garlic, minced
  • 1 tsp thyme dried
  • 1 tsp bay leaf
  • 5 cup chicken broth
  • 1/2 tsp black pepper
  • 2 cup kale, chopped
  • 1 tbsp apple cider vinegar

Steps

  1. Heat the olive oil in a large pot over medium heat and cook the onion, carrot and celery for 8 minutes until soft.
  2. Add the garlic and thyme and stir 1 minute, then add the ham, beans, bay leaf, broth and pepper.
  3. Bring to a boil, reduce the heat and simmer 20 minutes, mashing about a cup of the beans against the side of the pot to thicken the soup.
  4. Stir in the kale and cook 5 minutes until tender.
  5. Remove the bay leaf, stir in the vinegar and divide into 6 portions.
