Contains: egg

Ingredients

  • 2 avocado, halved and pitted
  • 4 large egg
  • 4 slice bacon
  • 2 tbsp fresh chives, chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika

Steps

  1. Heat the oven to 425 F (220 C). Cook the bacon in a skillet over medium heat for 6 to 8 minutes until crisp, then crumble it.
  2. Scoop a little extra flesh out of each avocado half so the hollow can hold a whole egg, and set the halves in a small baking dish so they sit level.
  3. Crack one egg into each of the 4 avocado halves and season with salt, pepper and paprika.
  4. Bake 15 to 18 minutes, until the whites are set and the yolks are as firm as you like.
  5. Top with the crumbled bacon and chives and serve from the dish.
