Ingredients

  • 1 cup white rice, cooked ahead and chilled
  • 1 tbsp vegetable oil
  • 1 cup kimchi, chopped
  • 2 tbsp kimchi, juice from the jar
  • 3 scallion, sliced
  • 2 clove garlic, minced
  • 1 tbsp tamari
  • 1 tsp sugar
  • 2 tsp sesame oil
  • 2 large egg
  • 1 tsp sesame seeds

Steps

  1. Heat the vegetable oil in a large nonstick skillet or wok over medium-high heat. Cook the kimchi and garlic 3 to 4 minutes until fragrant and slightly caramelized.
  2. Add the cold rice, breaking up clumps, and stir-fry 4 minutes. Add the kimchi juice, tamari and sugar and toss 2 minutes until the rice is hot and lightly crisp.
  3. Stir in the scallion and sesame oil off the heat.
  4. Fry the eggs in a separate pan until the whites are set and the yolks are still runny. Serve the rice topped with the eggs and sesame seeds.
