Ingredients
- 12 oz cod, 2 fillets
- 3 tbsp olive oil
- 3 clove garlic, sliced
- 1 1/2 cup cherry tomato
- 1 lemon, zested and juiced
- 2 tbsp fresh parsley, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
Steps
- Pat the cod dry and season with half the salt and the pepper.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Cook the cod 3 to 4 minutes per side until it flakes and reaches 145 F (63 C) inside, then move it to a plate.
- Lower the heat to medium, add the remaining oil, garlic and tomatoes and cook 4 minutes, pressing a few tomatoes so they burst.
- Stir in the lemon zest, lemon juice and remaining salt, return the cod to the pan for 1 minute, and finish with parsley.
