Ingredients

  • 3 1/2 lb pork shoulder, in one piece
  • 2 tbsp smoked paprika
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp cayenne
  • 1 tbsp honey
  • 1/2 cup apple cider vinegar
  • 1/2 cup chicken broth
  • 1 onion, sliced
  • 4 cup red cabbage, shredded
  • 1 cup carrot, grated
  • 3 tbsp apple cider vinegar
  • 2 tbsp olive oil

Steps

  1. Heat the oven to 300 F (150 C). Mix the paprika, onion powder, garlic powder, salt, pepper and cayenne and rub it all over the pork.
  2. Spread the sliced onion in a Dutch oven or roasting pan, set the pork on top and pour in 1/2 cup of the vinegar, the honey and the broth.
  3. Cover tightly and cook for 4 to 5 hours, until the pork reaches 200 F (93 C) and shreds easily.
  4. Toss the cabbage and carrot with the 3 tablespoons of vinegar, the olive oil and a pinch of salt and let stand while the pork rests.
  5. Shred the pork with two forks, mix with the pan juices and serve with the slaw.
