Ingredients

  • 6 cup beef broth
  • 2 cup water
  • 1 onion, halved
  • 3 tbsp ginger, sliced
  • 2 tsp cinnamon
  • 1/2 tsp cloves ground
  • 1 tsp cardamom
  • 2 tbsp fish sauce
  • 1 tsp sugar
  • 8 oz rice noodles
  • 12 oz beef sirloin, sliced paper-thin
  • 2 cup bean sprouts
  • 1/2 cup fresh basil
  • 1/4 cup scallion, thinly sliced
  • 1 lime, cut in wedges
  • 1 jalapeno, sliced

Steps

  1. Char the onion halves and ginger in a dry pot over high heat for 5 minutes until blackened in spots.
  2. Add the broth, water, cinnamon, cloves, cardamom, fish sauce and sugar. Simmer, partly covered, 25 minutes, then taste and adjust.
  3. Cook the rice noodles according to package directions, drain and divide among four bowls with the raw sirloin on top.
  4. Bring the broth to a rolling boil, strain, and ladle it over the beef and noodles; the thin beef cooks in about 1 minute.
  5. Serve with bean sprouts, basil, scallion, lime and jalapeno.
