  • 1 lb shrimp, peeled and deveined
  • 3 tbsp fish sauce
  • 2 tbsp lime juice
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1/2 tsp red pepper flakes
  • 2 tbsp vegetable oil
  • 3 clove garlic, minced
  • 3 large egg, beaten
  • 2 cup bean sprouts
  • 4 scallion, sliced
  • 1/3 cup peanuts, chopped
  • 1 lime, cut in wedges

Steps

  1. Soak the noodles in hot tap water 20 to 25 minutes until pliable but still firm, then drain.
  2. Whisk the fish sauce, lime juice, brown sugar, rice vinegar and pepper flakes until the sugar dissolves.

  5. Return the shrimp with the bean sprouts and scallions and toss 1 minute. Serve topped with peanuts and lime wedges.
